One of my favorite desserts, that always makes me think of springtime, is this Pineapple Cake! It’s a light, moist cake with an incredible cream cheese icing. Adding a citrus essential oil to the icing gives it a brighter flavor.
To make the cake, combine all ingredients. Bake in a 9x13” pan, at 350, for 35 minutes. Allow to cool completely before icing.
To make the icing, start by mixing the milk, essential oil and pudding mix. Then beat in the remaining ingredients until smooth.
