Rainy Day Oatmeal
It’s been cold and rainy all week, and I’ve been craving something warm and hearty for breakfast. This oatmeal hit the spot!
1 1/2 cups milk
2 cups water
1 1/2 cups old fashioned oats
1/4 teaspoon kosher salt
1 banana, sliced
1/2- 1 cup dried fruit (I use cranberries, but raisins, cherries or apricot would be great!)
1 drop Cassia essential oil
Pure maple syrup or brown sugar, for serving
Heat the milk and water in a medium saucepan until it starts to simmer. Add the oatmeal and salt; bring to a boil. Lower the heat and simmer for 4-5 minutes, stirring occasionally. Turn off the heat; add banana and cranberries, and Cassia. Place lid on pan and allow to sit for 2 minutes. Serve hot with a drizzle of syrup, a spoon of brown sugar and/or extra milk.
