Savory Carrot Muffins

I came across this recipe the other day, and it’s becoming a favorite! What I love is how easy it is to change up the flavor...

1 cup finely shredded carrots

4 eggs, beaten

3 tablespoons melted butter

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon baking powder

1/8 teaspoon cumin

1 toothpick to 1 drop black pepper essential oil

Combine all ingredients in a bowl; mix well. Grease your muffin tin. Pour approximately 1/4 cup batter into each space (yields 6 muffins). Bake at 350 for 30 minutes.

Try adding your favorite herb or spice essential oils to create new variations of this recipe. Remove the cumin, if desired. Add 1 toothpick to 1 drop of each oil (Turmeric, Rosemary, Basil, Clove...might be good to try individually or a combination of a couple). What is your favorite combination????
